Linguine with Zucchini-Clam Sauce
- 12 oz. linguine
- 1/4 c. olive oil
- 2 medium zucchini
- 1 1/2 tsp. minced garlic
- 2 can minced clams
- 1/4 tsp. salt
- 1/4 tsp. crushed red pepper
- chopped parsley
- Cook pasta according to package directions.
- Meanwhile heat 1 tablespoon of the oil in a large skillet.
- Add zucchini and saute 5 minutes until lightly browned.
- Stir in remaining Sauce ingredients (including clam liquid) and bring to a boil.
- Reduce heat and simmer, uncovered, 3 minutes to develop flavors.
- Drain pasta, transfer to a large serving bowl, add sauce and parsley and toss to mix and coat.
