Linguine with Zucchini-Clam Sauce

  1. Cook pasta according to package directions.
  2. Meanwhile heat 1 tablespoon of the oil in a large skillet.
  3. Add zucchini and saute 5 minutes until lightly browned.
  4. Stir in remaining Sauce ingredients (including clam liquid) and bring to a boil.
  5. Reduce heat and simmer, uncovered, 3 minutes to develop flavors.
  6. Drain pasta, transfer to a large serving bowl, add sauce and parsley and toss to mix and coat.
