Curried Cider-Braised Pork Chops

  1. Melt butter in large skillet over medium-high heat.
  2. Sprinkle pork with salt and pepper.
  3. Add pork to skillet and saute until brown, about 3 minutes per side.
  4. Using tongs, transfer pork to plate.
  5. Add onions, celery and bay leaf to skillet.
  6. Saute until onions are golden, about 6 minutes.
  7. Mix in curry powder.
  8. Add cider and boil until sauce is slightly reduced, about 6 minutes.
  9. Return pork and any accumulated juices to skillet.
  10. Simmer just until cooked through, about 3 minutes for boneless chops and 5 minutes for bone-in chops.
  11. Season with salt and pepper.
