Pork Chop & Rice Casserole Recipe
- 4 med. pork chops
- Salt & pepper
- 1 med. onion
- 1/2 c. raw rice
- 1 can condensed consomme, undiluted
- 2 tbsp. water
- Dash of marjoram
- 1 med. tomato, cut into 4 slices
- 4 rings green pepper
- Brown chops well in skillet, sprinkle with salt and pepper.
- Cut 4 slices from center of onion reserving this for later use.
- Chop remaining onion and combine with raw rice in 2-qt casserole.
- Top with chops.
- To drippings in skillet, add in consomme, water and marjoram; bring to a boil.
- On each pork chop place one slice each of tomato, onion and green pepper; sprinkling each with salt and pepper.
- Pour consomme mix over all.
- Bake covered at 350 degrees for 1 hour or possibly till meat is tender.
- Makes 4 servings.
