Fiesta Tamale Pie

  1. Heat oil in a wide frying pan over medium heat; add the onion and garlic and cook until onion is limp.
  2. Crumble in the beef and sausage and cook until browned; discard excess fat.
  3. Stir in the tomatoes (break up with spoon) and their liquid, corn, chili powder, oregano, and cumin.
  4. Cover and simmer for 10 minutes, then stir in the olives.
  5. Spread mixture in a shallow 3 quart casserole.
  6. Prepare topping and spoon over meat mixture, then sprinkle with cheese.
  7. Bake, uncovered in a 350 degree oven for 45 minutes or until top is set when lightly touched.
  8. Corn Bread Batter:.
  9. 1/2 cup sifted flour.
  10. 1 t. baking powder.
  11. 3/4 cup corn meal
  12. 1 beaten egg.
  13. 1 t. salt.
  14. 1/2 soda.
  15. 1 cup buttermilk.
  16. 2 T. melted fat or salad oil.
