Eileen'S Fruit Cake
- 1/2 lb. butter (not margarine)
- 1/2 dozen eggs
- 1 qt. pecans
- 1 lb. candied pineapple
- 1 lb. candied cherries
- 1/2 lb. chopped dates
- 1/2 c. pineapple juice
- 1/2 tsp. almond flavoring
- 1/2 tsp. lemon flavoring
- 1/2 tsp. orange flavoring
- 2 1/2 c. plain flour
- 2 c. sugar
- 1 tsp. baking powder
- 1/2 tsp. salt
- Cream butter and sugar, add eggs (1 at a time).
- Add pineapple juice and flavorings.
- Mix well.
- Add half flour ingredients.
- Mix other half flour with chopped fruits and nuts. Mix all together.
- Pour into greased and foiled tube pan (grease pan then line with foil) and grease again.
- Bake at 275u0b0 for 3-4 hours.
