Spinach, Bacon & Feta Frittata

  1. Place spinach in large microwaveable bowl; cover with waxed paper.
  2. Microwave on HIGH 1-1/2 min.
  3. or just until wilted.
  4. Place spinach in strainer; press to remove excess moisture.
  5. Cool.
  6. Heat oven to 350F.
  7. Blend eggs and cream cheese in blender until smooth; pour into medium bowl.
  8. Add hash browns, feta, 2/3 of the bacon and spinach; mix well.
  9. Spoon into 9-inch pie plate sprayed with cooking spray.
  10. Bake 35 to 45 min.
  11. or until knife inserted in centre comes out clean.
  12. Top with tomatoes and remaining bacon.
