Apple Walnut Salad With Cranberry Vinaigrette
- 12 cup chopped walnuts
- 6 cups salad greens
- 2 gala apples or 2 fuji apples, chopped
- 14 cup fresh cranberries
- 3 tablespoons balsamic vinegar
- 12 cup chopped red onion
- 1 tablespoon honey
- 1 tablespoon Dijon mustard
- 12 cup vegetable oil
- salt and pepper
- Toast walnuts for 8-10 minutes in a 350F oven.
- In a food processor or blender, combine cranberries, vinegar, onion, honey and mustard.
- Puree until smooth.
- Gradually add oil and season to taste with salt and pepper.
- In a salad bowl, toss together greens, apples and enough dressing to coat.
- Sprinkle with walnuts.
