Apple Walnut Salad With Cranberry Vinaigrette

  1. Toast walnuts for 8-10 minutes in a 350F oven.
  2. In a food processor or blender, combine cranberries, vinegar, onion, honey and mustard.
  3. Puree until smooth.
  4. Gradually add oil and season to taste with salt and pepper.
  5. In a salad bowl, toss together greens, apples and enough dressing to coat.
  6. Sprinkle with walnuts.
