Beef and Roasted Capsicum Salad
- 500g rump or sirloin steak Safeway 1 lb For $5.99 thru 02/09
- 1/4 cup KRAFT Italian Dressing
- Salad
- 1 small green oak lettuce, washed
- 50g rocket leaves
- 1 red onion, sliced
- 1 roasted red capsicum, cut into thick strips
- 1 roasted yellow capsicum, cut into thick strips
- 1/2 cup chickpeas
- 1/3 cup black olives
- 1/3 cup KRAFT Italian Dressing, extra
- Marinate the steak in the dressing for 1-2 hours.
- Char-grill or BBQ the steak for 5-8 minutes or until cooked to your liking.
- Allow to rest for 2-3 minutes.
- Combine the salad ingredients and toss through the dressing.
- Slice the beef thinly and arrange with the salad onto serving plates.
- Serve immediately.
