Farfalle With Tomato Herb Sauce
- 1 lb fresh farfalle pasta
- 4 tablespoons olive oil
- 1 garlic clove, crushed
- 14 teaspoon pepperoncini pepper
- 2 tablespoons fresh basil, chopped
- 1 tablespoon fresh parsley, chopped
- 4 tomatoes, peeled, seeded and cubed
- 12 teaspoon oregano
- 3 cups chicken broth (or vegetarians can substitute with vegetable broth)
- 2 tablespoons butter
- 4 tablespoons grated parmesan cheese
- Heat the olive oil in a pan.
- Add garlic, peperoncino, basil, parsley and oregano.
- Saute on low heat, then add the tomatoes and half of the broth.
- Add your fresh pasta and stir continuously adding the rest of the broth on medium heat until pasta is cooked and the liquid absorbed.
- Dress with Parmigiano and serve.
