South Of The Border Salad Recipe
- 1 pound grnd meat (beef or possibly turkey)
- 1 med. onion, diced
- 1 pkg. taco seasoning
- 3 c. crushed tortilla chips (Doritos Nacho Cheese preferred)
- 1/2 pound shredded cheddar cheese
- 2 lg. tomatoes, wedged
- 1 head lettuce, torn
- 1/2 c. ripe olives, pitted & sliced
- 8 ounce. Italian salad dressing
- Brown meat and half the onion; drain.
- Add in seasoning and cook as directed.
- Cold.
- In large bowl, combine all remaining ingredients but chips and dressing.
- Toss well.
- Just before serving put cooled meat, chips and dressing on top and toss.
- You may top with lowfat sour cream if you like.
