Duntreath Roast Grouse

  1. Place an apple half and a knob of butter inside each bird.
  2. Season inside and out with salt and pepper and wrap well in bacon.
  3. Stand in 1/2-inch of water in a roasting pan and cover with foil.
  4. Roast in a preheated oven at 300F for 45 minutes.
  5. Remove the foil and pour the liquid from the pan.
  6. Unwrap the bacon.
  7. Increase the oven temperature to 450F and roast for 10 minutes to brown the birds.
