Duntreath Roast Grouse
- 6 grouse
- 3 apples, halved
- 8 oz. butter
- Salt
- Black pepper; freshly ground
- Streaky bacon rashers
- Place an apple half and a knob of butter inside each bird.
- Season inside and out with salt and pepper and wrap well in bacon.
- Stand in 1/2-inch of water in a roasting pan and cover with foil.
- Roast in a preheated oven at 300F for 45 minutes.
- Remove the foil and pour the liquid from the pan.
- Unwrap the bacon.
- Increase the oven temperature to 450F and roast for 10 minutes to brown the birds.
