Orange Rice

  1. In a 2-quart microwave safe casserole combine the rice, water, orange juice, margarine and salt.
  2. Cover; microwave on high for 5 minutes.
  3. Stir in the orange rind.
  4. Turn the bowl 1/4 turn.
  5. Microwave on high an additional 10 minutes, turning the bowl after 5 minutes.
  6. Do not uncover the bowl.
  7. Allow to set, covered, for an additional 10 minutes or until all the liquids have been absorbed.
  8. Immediately before serving, fluff with a fork, add orange sections and mix gently.
