Whipped Sweet Potato Bake

  1. Preheat oven to 350F.
  2. Place sweet potatoes on microwaveable plate.
  3. Microwave on HIGH 8 min.
  4. Turn potatoes over; continue microwaving 9 to 10 min.
  5. or until very tender.
  6. Let stand 5 min.
  7. Cut potatoes in half lengthwise.
  8. Scoop pulp into large bowl; discard skins.
  9. Beat sweet potatoes, margarine, cinnamon, ginger and nutmeg in medium bowl with electric mixer on medium speed until well blended.
  10. Spoon into lightly greased 9-inch square baking dish; top with marshmallows.
  11. Bake 15 to 20 min.
  12. or until potato mixture is heated through and marshmallows are lightly browned.
