Mediterranean Market Chicken, Sundried Tomato, and Potato Pizza

  1. Preheat oven to 425F.
  2. In a large 12-inch nonstick skillet, heat olive oil over medium-high heat.
  3. Add Simply Potatoes.
  4. Cover; cook 12 to 14 minutes, stirring occasionally, until tender and browned.
  5. Meanwhile, lightly grease a large baking pan or pizza pan.
  6. Place pre-baked pizza crust on pan.
  7. Bake 5 minutes.
  8. Remove from oven.
  9. Spread Alfredo sauce over crust to about 1/2 inch of edge.
  10. Top with potatoes, chicken, sundried tomatoes, cheeses, and if desired, crushed red pepper.
  11. Bake 8-12 minutes, or until cheese has melted.
  12. Remove from oven; immediately top with spinach.
  13. Cut into wedges; serve immediately.
