My South Carolina State Famous Pimento Cheese
- 1/2 lb sharp cheddar cheese ( cracker barrel)
- 1/2 lb extra sharp cheddar cheese (cracker barrel)
- 1 1/2 cup mayonnaise
- 1 jar diced pimentos., drained
- 1 to 2 Tbsp onion juice
- 1 tsp salt
- 1 tsp ground black pepper
- 1/2 to 1 teaspoon white pepper
- 1/2 to 1 teaspoon cayenne pepper
- 1 jalopeno peppers, chopped; if desired
- Grate the cheese.
- DO NOT USE PROCESSED GRATED Cheese.
- It does not soften.
- Add in 1 1/2 cups mayo; add in slowly to see if you need the whole amount.
- Mix in the rest of the ingredients.
- Don't over mix.
- Use a fork.
- Let set overnite to blend.
- I have used extra sharp cheddar cheese for entire recipe and it's awesome!
