Seafood Chowder
- 1/2 c. chopped frozen onions
- 2 Tbsp. butter or oleo
- 1 1/2 c. water
- 1 lb. chopped shrimp
- 1 lb. crabmeat
- 1 lb. scallops
- 3 c. frozen hash brown potatoes
- 1 1/2 tsp. salt
- 1/4 tsp. pepper
- 4 c. milk
- 1/2 c. half and half
- 1 c. shredded Cheddar cheese
- Cook onions in the butter until tender.
- Add water until it boils.
- Add seafood.
- Cook 3 to 5 minutes, then take seafood out and put in a bowl.
- Add potatoes, salt and pepper.
- Simmer 4 to 6 minutes until potatoes are tender.
- Add milk and half and half and bring to a boil.
- Take off heat.
- Stir in cheese.
- Let stand 2 minutes.
- Put seafood back in.
- Stir and serve.
- Serves 10 (1 cup) servings.
