Red Snapper Fillets, Florida Style
- 1 1/2 pounds red snapper fillets
- 1 x salt
- 1 x black pepper freshly ground
- 1 x nutmeg freshly grated
- 1 1/2 Teaspoons orange zest grated
- 1 teaspoon grapefruit peel grated
- Preheat oven to 400F (200C).
- Put the fillets in a lightly buttered baking dish.
- Sprinkle them lightly with salt and pepper and nutmeg and distribute the grated rinds on top.
- Cover with foil and bake 15 minutes.
