Red Snapper Fillets, Florida Style

  1. Preheat oven to 400F (200C).
  2. Put the fillets in a lightly buttered baking dish.
  3. Sprinkle them lightly with salt and pepper and nutmeg and distribute the grated rinds on top.
  4. Cover with foil and bake 15 minutes.
