Ratatouille Stuffing

  1. Heat oil in large saucepan on medium-high heat.
  2. Add onions and mushrooms; cook and stir 5 min.
  3. or until tender.
  4. Add eggplant, zucchini, tomatoes and tomato sauce; mix well.
  5. Bring to boil; cover.
  6. Simmer on medium-low heat 15 to 20 min.
  7. or until vegetables are tender.
  8. Stir in stuffing mix just until moistened.
  9. Remove from heat.
  10. Let stand, covered, 5 min.
