Savory Pork Loin Roast
- 3 lb Pork Loin Sirloin
- dash salt
- dash pepper
- 2 tbsp olive oil, extra virgin
- 2 packages dry onion soup mix
- 4 cup water
- 1 can cream of mushroom soup
- 2 bay leaf
- 1 tbsp italian seasoning
- 2 clove garlic
- 1 large yellow onion
- 4 medium red skin potatoes
- 5 medium carrots
- Heat oil in a medium skillet on medium-high heat.
- Sprinkle salt and pepper all over the pork loin.
- Sear the pork loin on all sides in the skillet.
- You're done with the skillet.
- **Shut it off and transfer the pork to a cutting board.
- Thinly slice garlic cloves and half of the onion.
- Make small slits on the top of the pork loin and stuff each slit with garlic clove and onion slices.
- In the crockpot mix the water, dry onion soup mix, cream of mushroom soup, bay leaves, salt and pepper, and italian seasoning.
- Turn the crockpot on high and place the pork loin in.
- Baste the top of it with the soup and cover.
- Cut your potatoes, carrots, and remaining onion and toss them in with the roast.
- Cook on high for 4 to 5 hours until the pork loin is throughly cooked and the proper internal temperature is reached.
- To make the roast extra moist and delicious, baste it every half hour with the soup mix.
- To make a thicker gravy, place some of the soup mix into a skillet and add a tablespoon or two of cornstarch and heat until thickened.
- Serve with some fresh baked bread and enjoy!
