Basic Whipped Sweet Potatoes

  1. In a medium saucepan, cook sweet potatoes in boiling water to cover until tender, 25-30 minutes.
  2. Drain, peel off skins.
  3. Place potatoes in a bowl.
  4. Mash with potato masher or electric mixer until smooth.
  5. Add butter, milk, sugar, and allspice; mix until fluffy and blended.
  6. Serve at once.
  7. Or, place in a buttered 1 quart casserole.
  8. Cover and bake in a preheated oven at 350* until hot, 20-30 minutes.
