Basic Whipped Sweet Potatoes
- 2 lbs fresh sweet potatoes (yams)
- 12 cup butter
- 13 cup hot milk
- 4 tablespoons sugar
- 1 14 teaspoons allspice
- In a medium saucepan, cook sweet potatoes in boiling water to cover until tender, 25-30 minutes.
- Drain, peel off skins.
- Place potatoes in a bowl.
- Mash with potato masher or electric mixer until smooth.
- Add butter, milk, sugar, and allspice; mix until fluffy and blended.
- Serve at once.
- Or, place in a buttered 1 quart casserole.
- Cover and bake in a preheated oven at 350* until hot, 20-30 minutes.
