Strawberry Lemonade Fruit Roll Ups

  1. Place strawberries and lemon zest in a high-powered blender.
  2. Blend on high until smooth.
  3. Line two large baking sheets with parchment paper.
  4. Pour 3 strips of puree lengthwise onto each baking sheet, 2 inches apart.
  5. Bake at 175 degrees F for 2 1/2 to 3 hours; strips on bottom rack will cook closer to 2 1/2 hours, and strips on top rack closer to 3 hours.
  6. Using a pair of scissors, cut along each strip of fruit roll ups so that edges are smooth and pretty.
  7. Roll fruit roll ups around a thick pen and fasten with washi tape.
  8. Peel off paper when ready to eat.
