Curried Lamb Casserole with Sweet Potatoes
- 1 pound Leg Of Lamb, Cut Into Cubes And De-boned
- 1/2 cups All-Purpose Flour, For Dusting
- 1 Tablespoon Vegetable Oil
- 2 teaspoons Garlic, Crushed
- 1 Small Onion, Finely Chopped
- 1 cup Carrots, Finely Chopped
- 1/2 cups Sweet Red Pepper Or Green Pepper, Chopped
- 2 cups White Mushrooms, Sliced, Stems Removed
- 2 teaspoons Garlic Powder Or Granulated Garlic
- 1 Small Sweet Potato, Peeled And Cut Into Cubes
- 3 cups Beef Broth
- 1/2 cups Red Wine
- 3 Tablespoons Tomato Paste
- 2 teaspoons Medium Curry Powder

- Dust lamb with flour making sure that you coat all sides.
- 2.
- In a large pot over medium heat, heat oil.
- When oil is hot add the lamb into the pot and saute it for 2 minutes or until seared all over.
- 3.
- Remove lamb from pot and set aside on a plate.
- 4.
- Add garlic and onion into the pot and saute for 5 minutes until soft.
- 5.
- Add carrots, sweet pepper, mushrooms and garlic powder, saute for another 5 minutes.

- Add sweet potatoes, broth, red wine, tomato paste and curry powder to pot and add lamb back into the pot as well.
- 7.
- Cover and simmer for 90 minutes, stirring occasionally until lamb is tender.
