Veal Or Chicken Marsala Recipe

  1. Lb.
  2. chicken or possibly veal till thin.
  3. Dredge in bread crumbs.
  4. Heat oil in skillet.
  5. Saute/fry breast till brown.
  6. Remove breast and put in baking dish.
  7. Sprinkle pepper over breasts.
  8. In small saucepan bring to boil 1/2 c. water and 1/2 c. wine.
  9. Reduce to 1/2 the amount.
  10. Pour wine mix over breasts.
  11. Heat oven to 250 degrees; cook for 3 to 4 hrs.
  12. Low oven temperature + long cooking time result in very tender breasts.
  13. If in a hurry, microwave for 8 min on high.
  14. Serves 4.
