Harvest Sweet Potato Pie

  1. Heat oven to 400F (200C).
  2. Stir sweet potatoes, brown sugar, salt, cinnamon and nutmeg in a large bowl until well blended.
  3. Whisk in remaining ingredients excep pecan halves and whipping cream.
  4. Spoon into pie shell.
  5. If desired, arrange pecan halves in a decorative circle around edge of pie.
  6. Bake pie in center of oven 45 minutes or until the tip of a pointed knife inserted in center of pie comes out clean and crust is golden brown.
  7. Cool pie on wire rack until room temperature.
  8. Serve with whipped cream.
