Deep Fried Eggplant with Mayonnaise
- 3 medium Eggplant (slim Japanese type)
- 3 tbsp Mayonnaise
- 1 1/2 tbsp Mentsuyu
- 1 as much (to taste) Green onion or scallion
- 1 Frying oil (vegetable oil)
- Wash the eggplants, wipe off the moisture with a paper towel, and chop them roughly.
- Deep fry the eggplants in 180C oil until crispy, drain the excess oil and put them in a bowl.
- Mix the mayonnaise and mentsuyu well, put the sauce on the serving plates along with the eggplant, sprinkle on some green onions, and enjoy.
