Black Bean Soup

  1. Sautee the onion, carrot, and garlic in oil in a large pot until onion is soft.
  2. Add water and boullion cube, bring to a boil.
  3. Add corn and chillis and sir.
  4. Add the tomatoes and the chilli powder at this point.
  5. Stir.
  6. Add the black bean and remaining spices and give a stir.
  7. Cover and let simmer 30 minutes.
  8. For a thicker soup you could add some cornstarch.
  9. Top with scallions, cheese, avocado -- .
