All-In-One Cauliflower Supper
- 1 (1 1/2 lb) cauliflower
- 4 ounces salami (such as chorizo or italian salami, in one piece)
- 4 scallions, finely chopped and washed
- 3 tablespoons mayonnaise
- 2 ounces parmesan cheese, grated
- 12 ounces four cheese pasta sauce
- Cut the cauliflower into large florets leaving most of the inner leaves on.
- Cook in a large pan of boiling water for 7-10 minutes, or until just tender.
- Drain well.
- Meanwhile, peel and discard the skin from the sausage and roughly chop Place in a frying pan and stir over a high heat until the fat begins to run and the sausage starts to turn crispy at the edges.
- Add the scallionsand stir over the heat for a further 1 minute.
- Remove from the heat and stir in the cauliflower to coat in the juices, then transfer into a shallow ovenproof dish.
- Preheat the broiler to high.
- Heat the cheese sauce according to the instructions on the pack, then stir in the mayonnaise and half the parmesan.
- Spoon the sauce over the cauliflower.
- Sprinkle the remaining parmesan over the top and brown under the hot broiler for 3-4 minutes before serving.
