Herb Roasted Potatoes

  1. Preheat oven to 450 degrees F. In 3-quart saucepan, melt butter with parsley, lemon peel, salt, and pepper over medium-low heat.
  2. Remove saucepan from heat; add potatoes and toss well to coat.
  3. Place potato mixture in center of 24-inch by 18-inch sheet of heavy-duty foil.
  4. Fold edges over and pinch to seal tightly.
  5. Place package in jelly-roll pan and bake until potatoes are tender (when they can be pierced, through the foil, with a knife), about 30 minutes.
