Sausage Stuffed Potatoes
- 8 medium potatoes
- 34 lb sweet Italian sausage or 34 lb hot Italian sausage
- 2 slices bread, soaked in water and squeezed dry
- 3 tablespoons butter, divided
- 1 tablespoon choppped parsley
- 1 tablespoon stock
- 1 egg yolk
- 14 teaspoon salt
- 14 teaspoon pepper (omit if hot sausage is used)
- Preheat oven to 400F.
- Without peeling potatoes, boil for 10 minutes.
- Drain and peel.
- Using teaspoon, scoop out a deep hole for stuffing.
- In medium bowl, add skinned sausage, bread, 1 tablespoon of the butter, parsley, stock and egg yolk.
- Mix together well and carefully stuff into potatoes.
- Assemble potatoes in greased baking dish, dot with butter, sprinkle with salt and pepper and bake 15 minutes.
- Serve hot.
