Vickys Ham & Coleslaw Roll-Ups, Gluten, Dairy, Egg & Soy-Free
- 1 head of cabbage, grated/shredded
- 2 tbsp grated onion
- 1 grated carrot
- 120 ml Vickys Mayonnaise from my recipe link below
- 65 grams sugar
- 120 ml coconut or rice milk
- 2 1/2 tbsp lemon juice
- 1 1/2 tbsp white or apple cider vinegar
- 1 salt & pepper to taste
- 10 slice of ham
- To make the coleslaw just combine the mayo, milk, sugar, lemon juice and vinegar and whip together well.
- Add the grated veggies and season to taste with salt & pepper
- The coleslaw on its own will yield around 10 servings
- For the roll ups, simply take a spoonful of coleslaw and spread it over the slices of ham.
- Roll up like a swiss roll or roulade
- My hubby makes these while he's waiting for his supper lol
- Great if you're avoiding bread, you can add a little lettuce inside or they can just be part of a nice salad
