Apricot Jicama Salsa Recipe
- 1/2 lb Jicama, sliced thin, cut into 1/4-inch strips
- 4 x Apricots, pitted, cut into 1/2-inch slices
- 2 Tbsp. Chopped fresh cilantro
- 1/2 sm Red onion, halved & sliced thin
- 1/2 sm Red bell pepper, cored & sliced thin
- 1 Tbsp. Chopped chipotle chiles
- 2 Tbsp. Fresh lime juice, (1 lime for 2 Tbsp.)
- 1 Tbsp. Extra virgin olive oil Salt and grnd black pepper
- Mix all ingredients, including salt and pepper to taste, in large bowl, toss lightly.
- Chill till ready to serve.

- NOTES : Serve this clean, crunchy salsa with grilled fish such as tuna steaks.
