Couscous with Walnuts and Dried Fruit

  1. In a medium saucepan, bring the water just to a boil.
  2. Stir in the couscous.
  3. Remove from the heat and let stand, covered, for 5 minutes.
  4. Lightly fluff with a fork
  5. Meanwhile, in a medium bowl, whisk together the lime zest, lime juice, cumin, and garlic.
  6. Whisk in the oil.
  7. Add the couscous, tossing gently.
  8. Add the remaining ingredients, tossing gently.
  9. Serve at room temperature.
