- 1 cup uncooked rice
- 2 cups V8 vegetable juice
- 2 cups water
- 12 teaspoon chili powder
- 12 teaspoon cumin
- 15 ounces black beans
- 15 ounces corn
- 12 cup salsa
- 12 fresh tomato
- tortilla chips
- Begin cooking 1 cup rice in 2 cups V-8 and 2 cups water with the chili powder and cumin.
- After 5 minutes add can of black beans.
- Wait five minutes and add the corn and salsa.
- Chop the tomato; add it when the rice is almost done cooking.
- Crumble tortilla chips on top if you want.
