Couscous and Zucchini

  1. Add couscous to boiling water, remove from heat and cover.
  2. Let stand 5 minutes.
  3. In a large saute pan heat olive oil.
  4. Add red pepper flakes, garlic, zucchini, green onions, mint and salt.
  5. Cook until tender, about 5 minutes.
  6. Remove from the heat.
  7. Fluff couscous with fork and fold in vegetables.
