Turkey Kebabs With Asian Peanut Sauce

  1. Cut up turkey cutlets into large pieces (big enough to fit onto skewers) and place in a medium size glass dish.
  2. Puree garlic, ginger, lime juice, soy sauce, Dijon mustard, oil, chives and 1/2 tsp hot sauce until well blended.
  3. Pour marinade over turkey and coat thoroughly.
  4. Cover and marinate 1-2 hours in the refrigerator, tossing occasionally.
  5. Thread turkey pieces and cut up vegetables alternately onto skewers.
  6. Discard remaining marinade.
  7. Grill until turkey is cooked.
  8. In food processor, blend all peanut sauce ingredients until smooth and blended.
  9. Store in airtight container at room temperature until ready to serve.
  10. Pour some sauce over the turkey skewers and serve in a side dish for dipping.
