Black Bottom Cupcakes Recipe
- For the filling:
- 8 oz. cream cheese
- 1 1/4 cup chocolate chips
- 1 egg
- 1/3 cup sugar
- 1/8 t. salt
- For the cupcake:
- 3 cups flour
- 2 cups sugar
- 2 t. baking soda
- 1/2 cup cocoa
- 1 t. salt
- 2 cups water
- 2/3 cup oil
- 2 T. vinegar
- 2 t. vanilla
- Preheat oven to 350 degrees.
- Place cream cheese, egg, sugar, and salt in bowl, mix well.
- (It's OK for cream cheese to be in small lumps as cheese will melt) Stir in chocolate chips, set aside.
- Beat all remaining ingredients until blended.
- Fill cupcake liners 1/2 full.
- Top each with a teaspoon of cream cheese mixture.
- Bake in oven at 350 for 20-25 minutes.
- Check after 20 minutes, cream cheese should be white in color- not brown.
