Hearty Bacon Potato Chowder Recipe
- 8 slices bacon, cut into 1-inch pcs
- 2 c. (6 med.) cubed 1/2 inch new red potatoes
- 1 c. (2 med.) minced onions
- 8 ounce. (1 c.) carton lowfat sour cream
- 1 1/4 c. lowfat milk
- 1 (10 3/4 ounce.) can condensed cream of chicken soup
- 8 ounce. can whole kernel corn, liquid removed
- 1/8 teaspoon pepper
- 1/4 teaspoon thyme leaves
- In 3-qt saucepan, cook bacon over medium heat for 5 min.
- Add in potatoes and onions.
- Continue cooking, stirring occasionally, till potatoes are tender, 15-20 min.
- Add in remaining ingredients.
- Continue cooking, stirring occasionally, till heated through, 10-12 min.
- 6 servings.
- 40 min total preparation time.
