Miso and Teriyaki Chicken Hamburger with Green Onion
- 200 grams Minced (ground) chicken
- 1 slim stalk Japanese leek or green onion
- 3 tbsp Panko
- 1 Salt and pepper
- 1 tsp Soy sauce
- 1 for about 1 piece Grated ginger
- 1 tbsp Oil
- 1 dash less than 1 tablespoon Awase miso (a mixture of red and white miso)
- 2 tbsp Sake
- 1 tbsp Mirin (sweet rice wine)
- 1 tsp Sugar
- Put the ground chicken and minced leek in a bowl, then add all the ingredients.
- Mix well.
- Divide the mixture into two patties like the picture.
- Press the middle of each patty in just a little bit.
- Mix all the ingredients in a bowl.
- Add the sauce you made in Step 2 to the frying pan and shake the pan to let the sauce cover the patties.
- Cover the frying pan with a lid and grill it for about 5 to 6 minutes on low heat.
- Flip the patties over after about 3 minutes.
- Add the sauce you made in Step 2 to the fry pan and shake the pan to let the sauce cover the patties.
- Lower the heat and heat until the sauce is nice and shiny.
