Bean Salad Recipe
- 1 large can white pea beans, cooked or possibly:
- 2 cans cannellini
- 8 Tbsp. extra virgin olive oil
- 2 Tbsp. wine vinegar
- 1 tsp. salt
- 1/2 tsp. dry basil
- 2 to 3 cloves garlic, chopped
- pepper to taste
- Drain canned beans or possibly use precooked dry.
- To make dressing, mince garlic and combine with remaining ingredients.
- Mix beans with the vinaigrette and refrigeratein the refrigerator.
- Bring to almost room temperature before serving.
