Apple Raisin Bread
- 2 1/2 c. sugar
- 1 1/4 c. vegetable oil
- 4 eggs
- 4 tsp. vanilla extract
- 3 c. all-purpose flour
- 2 tsp. ground cinnamon
- 1 1/2 tsp. salt
- 1 1/2 tsp. baking soda
- 1 tsp. ground cloves
- 1/2 tsp. baking powder
- 3 c. chopped peeled apples
- 2/3 c. raisins
- 1/2 c. chopped walnuts
- In a large mixing bowl, combine the sugar, oil, eggs and vanilla; beat well.
- Combine the dry ingredients; gradually add to the sugar mixture.
- Fold in the apples, raisins and walnuts.
- Pour into two greased and floured 9 X 5 X 3 inch loaf pans.
- Bake at 350 degrees for 60 to 70 minutes or until a toothpick comes out clean.
- Cool for 10 minutes before removing from pans to wire racks.
- Makes 2 loaves.
