Hatteras Corn Bread Recipe
- 1/3 c. vegetable oil
- 2 c. white corn meal
- 3/4 c. flour
- 2 teaspoon salt
- 3/4 c. sugar
- 5 c. boiling water
- 1 (13 ounce.) can evaporated lowfat milk
- 2 teaspoon baking pwdr
- 3 Large eggs
- Grease 8x8 baking dish and put in cool oven.
- Preheat oven to 400 degrees with greased pan inside.
- In a large bowl combine cornmeal, flour, salt, and sugar.
- Pour in boiling water and mix well.
- Add in evaporated lowfat milk, baking pwdr, and Large eggs, one at a time, mixing with wire whisk.
- Mix well till free of lumps.
- Remove pan from oven and pour in mix.
- It will sizzle and oil will rise to top.
- Bake 55 to 60 min.
- Bread will be crunchy on top and soft inside.
- Cold 5 min.
