Parsee-Style Eggs

  1. Prepare all the veg and chop the cilantro
  2. Beat the eggs - to beat them really well, I break them into a clean jar, put the lid on and give them a vigorous shake for 30 seconds
  3. Melt butter in a cast iron skillet
  4. Add onions and cook for two minutes on medium heat
  5. Add turmeric and cook for another minute
  6. Add the chillis, tomatoes and cilantro and cook for 30 seconds, stirring
  7. Add the eggs, and cook, stirring for 2 minutes
  8. Serve on hot buttered toast (optional)
