Parsee-Style Eggs
- 2 tbsp butter
- 1 yellow onion, chopped
- 1/4 tsp turmeric
- 2 green chillis (choose the heat you like), sliced
- 2 ripe tomatoes, chopped roughly
- 3 tbsp chopped cilantro leaf
- 2 eggs
- 1 pinch salt and ground black pepper
- Prepare all the veg and chop the cilantro
- Beat the eggs - to beat them really well, I break them into a clean jar, put the lid on and give them a vigorous shake for 30 seconds
- Melt butter in a cast iron skillet
- Add onions and cook for two minutes on medium heat
- Add turmeric and cook for another minute
- Add the chillis, tomatoes and cilantro and cook for 30 seconds, stirring
- Add the eggs, and cook, stirring for 2 minutes
- Serve on hot buttered toast (optional)
