Chicken Soft Tacos
- 8 flour tortillas
- 14 cup vegetable oil
- 2 cups tomatoes, chopped
- 1 cup onion, chopped
- 1 large green pepper
- 4 cups boneless skinless chicken breasts, cooked and shredded
- 12 teaspoon thyme
- 12 teaspoon cumin
- 1 teaspoon chili powder
- 34 cup chicken broth
- 2 tablespoons cilantro (optional)
- salt and pepper, to taste
- Heat oil in large skillet.
- Add tomatoes, onions, and peppers; heat for 3-5 minutes.
- Stir in chicken, thyme, cumin, chili powder, and chicken broth.
- Season with salt and pepper.
- Simmer for 15 minutes.
- Stir in cilantro right before serving.
- Heat tortillas.
- Fill tortillas with mixture and serve.
