The Barnyard
- 4 tbsp Butter
- 4 tbsp Olive Oil
- 4 large Potatoes
- 1/2 Green Pepper
- 1/2 Yellow Onion
- 1 lb Pulled Pork BBQ
- 1 cup Favorite Nacho Cheese (Jar)
- 1/4 Bacon Bits
- 1/2 Sour Cream
- Brush potatoes with Olive Oil.
- Wrap each one in foil and bake at 400F for an hour and a half.
- Turn halfway through cooking.
- When potatoes a nearly done, melt butter in medium skillet and saute peppers and onions until just tender.
- About 10 minutes.
- Add Pulled Pork BBQ and cook until warmed through.
- (I Purchase my BBQ from my local meat market).
- Warm up the Nacho Cheese.
- Cut up potato as desired and layer with Pork BBQ, Nacho Cheese, Bacon Bits, and a dollop of Sour Cream.
- Enjoy!
