Edamame and Browned Garlic Spread
- 1 tablespoon extra virgin olive oil
- 6 garlic cloves
- 1 cup edamame, shelled
- 12 teaspoon salt
- 1 lemon, juice of
- Heat olive oil in a nonstick pan over medium-high heat.
- Saute garlic until golden brown, 2-3 minutes.
- Add edamame, and cook another 3 minutes.
- Add salt and lemon juice.
- Remove from heat and transfer everything to a food processor.
- Puree until smooth.
- Add a tablespoon of water if spread is too thick.
- Add salt to taste.
