Fire Island Pasta
- 1 pound Rotini Pasta
- 2 Tablespoons Olive Oil
- 1 pound Sweet Or Spicy Italian Sausage
- 1 package (10 Oz. Package) Frozen Broccoli Florets
- 1 whole Onion, Chopped
- 4 cloves Garlic, Chopped
- 1 teaspoon Dried Basil
- 1/2 teaspoons Crushed Red Pepper Flakes
- 1 can (14.5 Oz) Chicken Broth
- 1 cup Grape Tomatoes
- 1/2 cups Grated Parmesan Cheese
- Bring a large pot of lightly salted water to a boil.
- Add pasta and cook for 8 to 10 minutes or until al dente; drain, drizzle with some olive oil to prevent sticking and reserve.
- In a large skillet, heat oil and sausage; cook through until no longer pink.
- During the last 5 minutes of cooking, add broccoli, onion and garlic to the skillet.
- Sprinkle basil and crushed pepper in, add the broth and tomatoes.
- Cook over medium heat for 10 minutes to slightly reduce and until tomatoes pop open.
- Add pasta to the skillet and mix together.
- Sprinkle with cheese and serve immediately.
