Anastasia's Whole Wheat Zucchini-Banana Bread
- 2 large eggs
- 1 cup applesauce
- 2 teaspoons vanilla extract
- 1 cup sugar
- 3 tablespoons maple syrup (pure)
- 2 cups zucchini grated
- 1 small bananas soft, mashed
- 1 cup flour, all-purpose
- 2 cups whole wheat flour
- 1 teaspoon baking powder
- 3/4 teaspoon baking soda
- 1 teaspoon cinnamon
- 3/4 teaspoon salt
- 1/2 teaspoon nutmeg
- 1/2 cup nuts chopped
- 3 tablespoons sour cream, light optional but lends more moist taste
- Beat eggs.
- Add the applesauce, vanilla, sugar, maple syrup, zucchini and banana.
- Mix together well and add remaining ingredients.
- Pour into 2 greased and floured loaf pans (approx.
- 3 x 9 x 3 inches deep).
- Preheat oven to 350F (180C) F and bake for 45 minutes to 1 hour, or until toothpick inserted in center comes out clean.
- Makes two loaves.
