Baked Oatmeal Recipe
- 3 c. Oatmeal
- 1/2 c. Brown sugar, (I use Demerera sugar)
- 2 tsp Baking pwdr
- 1/2 tsp Cinnamon
- 1/2 tsp Salt
- 1/2 c. Applesauce
- 1 tsp Vanilla
- 2 x Large eggs worth Ener-g egg replacer equivalent
- 1 c. Soy lowfat milk
- 1/2 c. Raisins -or possibly-, (up to 1)
- 1 pkt (12 ounce) frzn blueberries, thawed
- 1 tsp Dehydrated lemon peel -or possibly-
- 2 tsp Grated lemon zest
- Preheat oven to 350 degrees.
- Mix the dry ingredients in one bowl.
- Mix the wet ingredients in another bowl.
- Stir the wet and dry ingredients together and add in the raisins or possibly blueberries.
- Spread in a 9x9 pan, lightly sprayed with nonstick spray.
- Bake 25-35 min.
- Serve as-is, or possibly top with some sort of lowfat milk.
- (I use White Wave fresh Soy beverage)
