Easy Parmesan-Potato Dinner Omelet
- 3 Tbsp. oil
- 2 cups ORE-IDA Shredded Hash Brown Potatoes
- 1 cup frozen mixed vegetables (carrots, corn, green beans, peas), thawed
- 6 eggs, beaten
- 2 Tbsp. milk
- 5 Tbsp. KRAFT Grated Parmesan Cheese, divided
- Heat oil in large nonstick skillet on medium-high heat.
- Add potatoes and vegetables; cook 7 min.
- or until potatoes are tender, stirring frequently.
- Mix eggs, milk and 4 Tbsp.
- Parmesan cheese until blended.
- Pour egg mixture evenly over potatoes and vegetables; cover.
- Cook on medium-low heat 15 min.
- or until eggs are almost set.
- Sprinkle with remaining cheese; cover.
- Let stand 5 min.
