Beer Boiled Shrimp
- 24 ounces, fluid Beer
- 1/4 cups Cider Vinegar
- 3 cloves Garlic, Crushed
- 1/2 teaspoons Kosher Salt Or Sea Salt
- 2 pounds Shrimp, Cleaned, Tails On
- 1/2 cups Red Onion, Chopped
- 1/4 cups Lemon Juice
- 2 Tablespoons Extra Virgin Olive Oil
- 2 whole Limes, Cut Into Wedges (optional)
- 1.
- Combine the first 4 ingredients in a med saucepan.
- 2.
- Bring the liquid mixture to a boil over med heat.
- Reduce heat, cover and simmer for 25 minutes.
- Stir occasionally.
- 3.
- Turn the heat to high and bring liquid to a rolling boil.
- Add the shrimp and stir as they cook.
- After 1-2 minutes they will be done.
- Scoop shrimp into a colander.
- Reserve cooking liquid.
- 4.
- Strain 1/2 cup of the cooking liquid.
- Stir in the rest of the ingredients (except limes).
- Add the shrimp and toss to combine.
- 5.
- Can be served warm, or cover and refrigerate, stir occasionally and serve cold.
- 6.
- Can make up to 3 days ahead.
- 7.
- Garnish with Lime wedges.
